Pedha
Ingredients:
425gm ricotta cheese,225ml milk,80-100gm sugar(as per your taste),1 tablespoon ghee(clarified butter) or unsalted butter,1 teaspoon cardamom powder,few strands of saffron(optional),almond and pistachio pieces.
Time:45mins-1hr.
Method:
1.First make khava(khoya,khova) by using ricotta cheese,keep nonstick pan on medium heat add butter/ghee,let it melt and add cheese keep stirring continuously(otherwise it would stick at the bottom) for 20 mins after 20 mins. you would see very thick consistency ricotta cheese,it
becomes almost like a soft dough.This is your khava.
2.Let it cool and knead for a while.
3.Keep one pan on medium heat and add khova and sugar,you would see this mixture a bit thin as sugar melts(sometimes it doesn't become thin at all,thats fine, it indicates your khava is perfect).
4.Add milk,you would see semisolid mixture,keep stirring continuously for another 20-25mins or untill all milk get absorbed and mixture becomes like khava itself(thick dough).
In this step add cardamom powder after 10-15 mins.
5.Let it cool and make small balls,garnish with some almond and pistachio pieces and press a little bit at the center.Pedha is ready.
Tip:1.While purchasing cheese look for 'whole milk' cheese,pedha turns out really good with whole milk cheese than 'part skim' cheese.
