Egg bhurji
Ingredients:
4 boiled eggs,1 medium size onion,1 tomato,1/2 tablespoon ginger garlic paste,1/2 tablespoon coriander powder,1/4 tablespoon cumin seed powder,1 tablespoon garam masala,1/2 teaspoon turmeric,1/2 tablespoon red chili powder,2-3 green chilies(optional),3 tablespoons oil,salt to taste,1/4 lemon,coriander leaves(cilantro) for garnishing.
Time:30 mins.
Method:
1.Remove the cover of eggs and grate it.keep aside.
2.Finely cut onion, tomato and cilantro.
3.Keep pan on medium to high heat,add oil when oil becomes hot add onions fry until soft and light golden in color.
4.Add ginger garlic paste,saute a minute then add turmeric stir once.
5.Add tomato and fry for 2-3 mins so that raw smell of tomato won't remain.
6.Add red chili powder,coriander and cumin seed powder stir well and add grated eggs,mix nicely and gently(be careful while mixing otherwise bhurji would get mushy).
7.Finally add garam masala,salt,squeeze the lemon,mix once again and cover for 2-3 mins.
8.Remove from heat,garnish with fresh coriander leaves and serve hot with white bread or chapati(roti).
Tip:
1.We can use crushed eggs too but grating gives nice texture.
2.If possible, use any chicken curry or meat masala instead of garam masala.
