Misal-pav


Ingredients:

1 cup sprouted mataki(moth),1 potato,1 tomato,1 onion,1 tablespoon ginger garlic paste,1/2 tablespoon coriander powder,1/2 tablespoon cumin seed powder,1/2 teaspoon turmeric,1/2 tablespoon red chili powder,1 tablespoon garam masala,some coriander leaves,salt to taste.
For garnishing:
1 tomato,1 small onion,1 cup pharsaan,3-4 tablespoon coriander leaves,lemon,4-5 tablespoon curd(yogurt).

Method:

1.Sprouted mataki:Soak mataki into the water overnight and take it out in the morning,take this mataki in cotton cloth hold four corners up and tie a knot tightly and keep covered for 8-10 hrs,you will see sprouts coming through the mataki.
2.Take potato,peel off the skin,cut into cubes, wash it and pressure cook sprouted mataki and potato cubes together by adding 3-4 cups of water for 4-5 whistles.Keep aside,don't throw stock,we will use it in gravy.
3.Now start making tadka,keep one pan on medium heat add oil when it becomes hot add mustard seed and cumin seed,let them splutter,add onion fry it to soft and till transparent,add ginger garlic paste,stir once and add turmeric,add tomato fry for 1-2 mins add red chili powder saute for a while,add coriander powder,cumin seed powder stir again,add mataki with stock to this masala,add garam masala and stir thoroughly,add more water than usual as we must have enough gravy while eating misal.
4.Bring it to boil and turn off the heat.
5.Finely cut onion,tomato and coriander leaves,Lets start serving misal fiirst take gravy in bowl,add tomato,onion,coriander leaves,pharsaan,squeeze some lemon,1 tablespoon curd(yogurt) (optional).mix well and eat with pav.
