Chocolate banana cake
Ingredients:
For cake:
1 3/4 cups all purpose flour(maida),2 cups sugar(granulated),3/4 cup(75gm) cocoa powder,1 1/2 teaspoon baking soda,1 1/2 teaspoon baking powder,1/2 teaspoon salt,2 eggs,1 cup(2 medium size) ripe bananas,3/4 cup warm water,1/2 cup milk,1/2 cup canola oil,1 1/2 teaspoon vanilla extract.
Frosting:
250 gm chocolates(semisweet dark chocolate,I have used Hershey's),3/4 cup(180ml) heavy whipping cream,1 tablespoon unsalted butter,banana chips(optional).
Time:Preparation-1 hr.,baking-45 to 60 mins.
Method:
1.Grease the 9x13 inch rectangular baking pan with butter or cooking spray.
2.Preheat the oven to 350 F.
3.Sift all purpose flour,add sugar,cocoa powder,baking powder,baking soda,salt mix together.
4.Whisk eggs,milk,water,vanilla,oil and mashed bananas together and stir until combined.
5.Mix step 1 ingredients with step 2.
6.You will see batter is thin(don't worry),pour this thin batter in greased pan.
7. Bake for 40-45 mins or until a toothpick inserted comes out clean.
8.Let it cool completely and keep in the refrigerator for 2-3 hrs(before frosting) so it will become firm and you can do frosting without breaking.
Frosting:
1.Break chocolate into pieces,keep aside in one bowl.
2.Keep one pan on medium heat add butter and whipping cream bring it to boil,immediately pour this mixture on chocolate pieces after five minutes stir until smooth,When frosting has completely cooled whisk until smooth and fluffy.
3.Spread this frosting on top of the cake.
4.Keep refrigerated for2-3 hrs.
5.Remove from refrigerater 1 hr. before eating.
