Mexican veggie rice





Ingredients:
1 cup rice,2 1/2 cup water,1 tablespoon oil,1 tomato,1/2 capsicum,1/2 onion,1/2 cup red and black beans,3-4 tablespoon sour cream,guacamole,5-6 tablespoon salsa(medium or hot as per your taste)1 cup lettuce,1 cup corn,cilantro,lemon,salt.

Time:30 mins.

Method:

1.For this we need guacamole,so first make guacamole.
2.Cook the rice by adding water salt and oil.Cook the beans till tender,if you have canned one,that's fine.Boil the frozen corn till cooked. On the other hand start cutting vegetables,chop tomato, 1 cup lettuce,onion and capsicum(sliced) and cilantro.
3.Take one pan keep on medium heat,add 1 tablespoon oil and saute the onion and capsicum for 3-4 mins. and take it out.
4.Now start mixing rice,first take some rice add few cilantro,now add tomato lettuce,capsicum,corn,beans,2 tablespoon salsa,1-2 tablespoon sour cream,2-3 tablespoon guacamole,squeeze some lemon, mix nicely and eat.

Isn't it simple and healthier too??

How much rice and all other ingredients you should add is absolutely up to you.


Tip:If you like other veggies you can use those.
