Aaloo tikki
Ingredients:
2 potatoes,1/2 onion(medium size),1 garlic clove,1/2 tablespoon cumin seed powder,1/2 tablespoon coriander powder,1/2 tea spoon red chili powder,1 teaspoon dried mango powder(aamchur),1/2 tablespoon chaat masala,2 tablespoon roasted pea nut powder(coarse),1 teaspoon dry fenugreek leaves(kasuri methi), 1-2 green chilies,5-6 tablespoon bread crumbs,1 tablespoon cornmeal(optional),some cilantro(coriander leaves),salt to taste,3-4 tablespoon oil for frying.
Time:30-45 mins.
Method:
1.Wash and cook the potatoes,peel off the skin and mash it.
2.Finely chop an onion,green chilies and cilantro(coriander leaves),crush the garlic.
3.Mix all above ingredients with step 1 and step 2 ingredients(except oil ,bread crumbs and corn meal),mix it nicely.
4.Make small 4-5 balls and press with palm at the center to flatten it(as shown in the picture) and coat all tikki with bread crumbs.
5.Take the skillet,keep on medium heat,spread 2 table spoon oil,put all the 'tikki' in the skillet,roast it on both side to golden brown. slowly roast on medium heat, so that you will get crispy tikki.
6.Serve these hot 'tikki' by spreading tamarind chatni,tomato ketchup,curd and shev(aalo bhujia).
