Vangycha Bharit
Ingredients:
1 eggplant,1 tomato,1 onion,1/2 cup green peas,1/2 tablespoon red chili powder,1/4 teaspoon turmeric,2-3 garlic cloves,2-3 green chilies,cumin and mustard seed,3-4 tablespoon oil,cilantro(coriander).
Time:for baking 45 mins.,for recipe 15 mins.
Method:
1.Wash an eggplant wipe it,apply some oil on eggplant(which helps removing skin easily)and keep it in the oven on 400F for 45 mins.
2.When it cools down take it out ant remove the skin,take this flesh and cut with knife in very small pieces and keep aside.
3.Finely cut onion and tomato and green chili.Mince the garlic and chop cilantro.
Keep one pan on medium heat add oil when it becomes hot add mustard seed as it pops up add cumin seed let them splutter now add onion and fry till transparent,add garlic stir for some time(don't burn garlic,it should remain white) add green chili stir for 30 sec.Add turmeric and red chili powder give one quick stir.
4.Now this is the time to add tomato and green peas stir well and cover it for 2-3 minns, stir occasionally, it starts leaving some oil at the edges now add eggplant flesh which we have kept aside.Mix well ,add salt and cover for 1-2 mins finally add cilantro and serve this hot bharit with "Bhakri" or chapati.
