Rajma
Ingredients:
1 cup rajma(beans),3 cups water,2-3 table spoon oil,1 tomato,1 onion(both very finely chopped),1 tablespoon tomato paste,1/4 teaspoon turmeric,red chili powder,1 spoon coriander and cumin seed powder,salt,1-2 table spoon butter,some jaggery,1 table spoon chat masala,1/2 table spoon garam masala,cilantro.
Time:30 min.
Method:
1.First take beans wash it and soak it in the water for 6-7 hrs.
2.Now take one pan keep it on medium to high heat.Add oil when it will become hot add cumin seed let it splutter,now add onion and fry it to pink.Now add ginger garlic paste again fry it for 1 min,add tomato and paste of tomato, fry it for 3-4 mins(you should not see chunks of tomato and get raw smell of tomato).To this add turmeric and red chili powder,coriander and cumin seed powder.keep stirring.
3.Add butter and garam masala and chaat masal.This is your masala,add rajma and enough water to cook.
4. Lastly don't forget to add some jaggery(1 inch piece),it brings very nice taste.Pour this rajma in the pressure cooker and cook it for 5-6 whistle,it should be tender when you press with finger.Let it cool down,take it out garnish with cilantro and serve with chapati or rice.
Tip:If you want you can first pressure cook rajma and make masala later and add cooked rajma in the masala.But I prefer this way (as mentioned in the above method).And consistency depends on how much thin you want,for eating with rice it should be more thin(gravy) than eating with chapati.
