Daal-Baati
Ingredients:
For baati:
2 cups of wheat flour;
2 table spoon of basan(gram flour);
3-4 tablespoon of sooji(rava);
30-40ml of ghee(clarified butter);
salt to taste;
For daal:
1/2 cup of toor daal,3-4 table spoon of oil,one small chopped onion,1 tablespoon ginger-garlic paste,1 spoon grated coconut(dry),tamarind,jaggery,1/2 teaspoon turmeric,1/2 tablespoon red chili powder(or as per your taste),mustard and cumin seed, 2-3 dry whole red chilies,curry leaves,cilantro(coriander leaves).
Method:
1.First mix all dry ingredients(for bati) then add melted ghee,mix nicely so that you won't see lumps.After that add water and make soft and firm dough.Divide the dough and Make small and equal size balls(size as shown in above pic.) by rolling in the hands or on rolling surface.keep it in preheated oven on 350F for 45-60 mins.
2.Check after 45 mins.,When it turns to golden brown you will see few cracks on the baati,it indicates done!Turn off the oven,when it will cool down take all baati out.Take enough ghee(melted) in one big container soak all baati in the ghee for five mins.(oops!! that much ghee!!),take it out ,keep aside.If you don't want to soak baati in the ghee and don't want to eat that much ghee,you can break those baati in halves and add ghee in the baati with spoon depending on how much ghee you want to eat).
3.We need some tamarind water for making daal so first make it,take 1/4 cup of boiled water add some tamarind to it,leave it for 10 min and take out all tamarind from this water.This is your tamarind water.Now pressure cook the daal by adding 2 cups of water & turmeric(2-3
whistles).Take it out,consistency depends on you.To this daal now add tamarind water.
4.Keep one pan on the medium heat for making tadka.Take oil in the pan,when it will become hot add cumin and mustard seed.Let them crackle,add onion and fry until it becomes pink and soft.After that add ginger garlic paste saute for a min. add whole red chilies, curry leaves,grated coconut stir well ,now add turmeric, red chili powder mix well and add daal to this tadka ,now add some jaggery(grated 1 tablespoon) and salt to taste.keep this daal on low heat for 5-7 mins.
5.Finally add cilantro and serve baati with hot daal.
Whenever you will make this dish just forget about all the dieting, at least for that day.(as this is a rich dish because a lot of ghee has been used) and enjoy the dish.............
